Hereford cattle are a breed of cattle characterized by a medium body frame and red-and-white coloration. Hereford cattle are undemanding, adapt well to various climatic conditions, are early-maturing, fertile, long-lived, and have a high ability to utilize pasture. They are hardy and mobile and perform well in extensive grazing in submontane and mountain areas, as they achieve good production even on less-quality pasture growth. They mature quickly, calvings are usually not difficult, and cows have excellent maternal qualities. At Buč farm, we have been raising Hereford cattle since 2012. Organic farming excludes any use of antibiotics, no medicines, no premixes, no feed mixes, only hay, silage from our meadows, and our organic grain. Immediately after slaughter at the abattoir, each slaughtered animal undergoes strict veterinary control. Beef – whole beef quarters – we process in our own butchery and packaging facility. Meat processing is subject to strict SVS (Veterinary Administration) control. The meat matures in a cold room hanging for approximately 1 week at a temperature of 0–2 °C. We typically make mixed meat packages – 10, 15, 20 kg, but it is not a problem to adapt to the customer's wishes and offer them a specific type of meat (muscle).
